Herbal Popsicles
In Western Canada, we are currently experiencing a heat wave (which weather forecasters are referring to as a heat dome!) Yikes.
Making popsicles out of herbal tea is a cost effective, easy, delicious and healthier alternative than most store bought popsicles. You can get all the same benefits of herbal tea but in popsicle form! The kiddos will love them too.
Below are some suggestions, but, there are no rules - have fun and make them in any way you feel called. Trust your intuition.
INGREDIENTS
You can really get creative with the herbs you use!
If you ordered Lemon Balm or Rose for The Solstice Awakening - either of those would be wonderful! They both have cooling herbal actions. Lemon Balm is from the mint family, so it brings that cooling flavour, as well. You can make a herbal tea infusion with both lemon balm and rose combined - or separately.
Other favs of mine for making popsicles are Lavender (so delicious with lemon balm) and Hibiscus (combined with rose is divine.)
DIRECTIONS
Make up a batch of herbal tea, sweeten it a bit if desired, pour into your popsicle mold and freeze.
To make your tea, steep 1 tablespoon of dried herb per cup of boiling water. I use a quart glass mason jar. Be sure to have the tea covered while steeping to prevent the essential oils from the herbs from evaporating.
Steep for 10 - 15 minutes.
Strain herbs.
Allow to cool.
If desired, sweeten with honey or sweetener of choice. Optional - add cut up pieces of fruit.
Pour into ice pop molds and freeze.
